Our dal mill and ghani

Most "organic" sellers online are repackagers. We grow it, mill it and press it.

Most people selling "organic dal" online did not grow it. They buy it from somewhere, repack it and sell it on. The more hands in the chain, the harder it is for anyone to say where it actually came from.

We can skip that, because the chain begins and ends on our own farm. We sow the tur, we harvest it, we mill it at our mill, and we sell it to you. You can ask which field it came from, and we can tell you.

From pod to dal

After harvest, the tur and moong are dried, hand sorted, and then go through the mill. The mill takes off the husk and splits the dal. That is all it does.

What we do not do matters more. We do not polish the dal — polishing grinds off the outer layer, where much of the goodness is, purely so it looks brighter. We do not coat it in oil, which many mills do to add shine. And we do not add colour.

The result looks duller than shop dal. It takes a little longer to cook. And the varan tastes of something.

The kachi ghani

Oil pressed the slow way

We are setting up a kachi ghani ghana on the farm. It is not running yet — and we would rather say so.

Kachi ghani means the groundnuts are crushed cold and slowly. No heat, no chemicals, no refining. Refined oil goes through something quite different — high heat, solvents, bleaching, deodorising. That gives you a clean, odourless oil. Ghani oil stays cloudy and smells strongly of groundnut.

We will announce it when the first batch is pressed. Tell us if you want some.
